Kumaoni Kadhi
Introduction
The Kumaoni Cuisine Jholi Bhat Is Highly Well-Liked. It Resembles The Punjabi Kadi Very Much. However, Jamboo , A Spice Or Herb Cultivated In The Himalayan Regions, Is Also Included In A Traditional Jholi. Although It Is Often Utilized In Traditional Kumaoni Cuisine, It Is Difficult To Find Outside Of Kumaon.
Recipe:
step 1: Besan Is Blended Into A Thick Paste Together With A Little Water, Turmeric, And Salt.
step 2: Add Curd Gradually And Thoroughly Combine With The Running Mixture. Heating Oil Cumin Seeds Should Splutter. Fry Garlic Till It Turns Pale Brown. Add Hing And Red Pepper Flakes.
step 3: Add The Curd Mixture Along With The Turmeric, Red Chili, And Coriander Seed Powders. Stir Continuously Until The Gravy Boils And Thickens. 5 To 10 Minutes Of Cooking.
step 4: Salt And Water Can Be Used To Adjust Flavor And Consistency. Include Chopped Greens. Cook The Leaves For A Short While Until They Are Soft.
Serve Jholi As A Side Dish To Rice And Ghee, Garnished With Coriander Leaves And Chilies.
